Japanese sweet potato cake

Satsumo-imo:  purple skin with creamy interior, tastes like chestnuts.

I made this experimental dessert:

2/3 baked potato, mashed
1 egg
1 tablespoon granulated monk fruit sweetener
salt to taste (maybe 1/16 teaspoon)
1 tablespoon heavy cream
3 tablespoons milk

All mixed together and baked in a shallow, flat bowl in the microwave for 5-6 minutes at 7.  It was staying puffed up (slightly) and had barely started to pull from the edge of the bowl.  After cooling for about 10 minutes, it had shrunk more.

It had a slightly cakey texture, but dense.  Could use some vanilla ice cream and some honey-toasted sliced almonds.  Might be good with cardamom, and definitely vanilla, but I didn't want to interrupt the potato flavor.

Definitely would like to experiment with this vegetable again.  (Japanese sweet potato pie?)  Maybe could use something a little tangy, like cream cheese or Greek yogurt.  (Pie with a yogurt layer?  And almond praline for crunch.)
